"The grapes, harvested in the vineyard after careful selection, are subjected to destemming and the passage of the grapes through the optical selector. After pressing them, the must ferments in 50 hl truncated cone-shaped barrels with maceration on the skins for about two weeks. A maturation period follows in medium-sized oak barrels, with a small fraction that is raised in barriques."
