Micro-vinification from vines on Jurrasic soil .02 degrees north from the Colline Rouge and with slightly higher elevation, giving it a brighter acidity. Since cold air flows down, the lower parts of the vineyard are at greater risk of spring frost. Diminished water at the top, facilitated by natural drainage, also means less mineralization in the wines. It results in a lower pH level, which makes the wines “finer and more elegant.” Fruit grown lower down is slightly riper and makes wines which are “rounder and more melting.”
Nothing's better than a Burgundy Pinot Noir, except maybe a Burgundy Chardonnay... D'Edouard farms biodynamically in vineyards surrounded by cherry trees and wheat fields. Pinots like this are elegant and light, with brighter acidity than other warmer regions. Red berries in a bed of roses and forest underbrush.
Edouard's Chardonnay has rich aromas of hazelnut, pear, and yellow apple with good weight and acidity. A great example of the grape from limestone soils and without new oak flavouring.
